Apple Spinach Salad with Poppyseed Vinaigrette

This is my companion dish to the Fiesta Pineapple Talipia.

Apple Spinach Salad
3 large handfuls of spinach
half an apple, chopped
1/4 c. dried cranberries
1/4 slivered toasted almonds

Layer toppings over spinach.

Poppyseed Vinaigrette
1/2 c. Extra virgin olive oil
1/3 c. apple cider vinegar
3 T. honey
1 t. apple juice concentrate
1 T. poppy seeds

Combine in airtight container, and shake to blend ingredients.  Drizzle over salad.
